How to make Restaurant style soft layered Malabar Parotta / Kerala Parotta at home . Follow this recipe, you can make perfect Kerala Parotta every time.
There are some tips you must follow to get perfect soft layered parotta :
1. Dough Consistency - Mix all purpose flour, salt, sugar by adding water little by little until you get a dough with a loose sticky consistency . DO NOT add oil during this step.
2. Kneading - Knead at least 10 minutes as shown in the video. Until you get a soft, very stretchy dough.
3. Resting the dough - Massage the dough with oil, cover with a wet towel and rest for at least 2 hours. Do not let it dry.
4. Make balls and rest it for at least 15 minutes.
5. Flatten the balls to a very thin sheet. Spread oil generously and pleat the sheet. Roll it to a round shape and rest for another 10- 30 minutes.
6. Flatten gently with your palm and cook on an oiled pan until both sides turn golden brown. Use oil generously during this step. Keep them hot.
7. Stack 3-4 Parottas and fluff them as shown in the video to separate the layers.
